Whether you carve for fresh vegetables, delicious baked goods, local fish or a trendy cup of coffee, I recommend to visit Torvehallerne http://torvehallernekbh.dk/. Pictures of the vegetable stands are taken in there and I will make a longer post of this food-oasis as soon as I've got to know the place just a little bit better.

Today I had time to cook some slow food unlike the other days of this week. I relied on one of my favourite autumn-winter time recipes, which I've learned from my boyfriend. My favourite thing about this recipe is that it's so simple (just a couple of ingredients are enough!) and flexible. To make the start easier, I have some suggestions (note, that smaller pieces need less time in an oven!):

Root vegetables:
Carrot, parsnip, beetroot, rutabaga, potato, sweet potato
I usually put some onion too.

Seasoning:
Garlic, basil, rosemary, oregano, thyme, parsley, salt, black pepper

Today I completed my dish with Danish rye-bread, autumn apples and broccoli. TIP 1# Put the rye-bread in a microwave for just a 10-20s, warming up will give it a heavenly taste!

TIP 2# Extra ingredients for a bit of a luxury: Feta, goat cheese, breadcrumbs, butternut squash, fennel, crème fraîche ...
